Lazy Breakfast & Lunch

Lately I've been really lazy to cook anything, so I've been making this super easy tofu scramble with a side of toast with avocado. 
All you need is 1/4 block of tofu, red, yellow, or green bell pepper, mushrooms, and any spices you like. (you can pretty much add anything you like) I used salt, pepper, cumin, paprika, and I top it off with some store bought salsa, which gives it a good flavor. It's easy and really good, and you can't go wrong with avocado. =)

Couscous & Tofu

Hello! I'm sorry i have not been posting anything lately, I've been a lazy bum, but i have a super easy delicious meal for you today it's Couscous! Something i have never tried before and i'm glad i did because it's actually really good.
Anyways i was at Target and i saw this whole wheat couscous(didn't notice it was whole wheat until after i cooked it) with roasted garlic & olive oil that came in a box and since i don't really like to cook i thought this would be super easy to make for days that i want a whole meal without spending a lot of time on it. Just to let you know this isn't a super healthy couscous box because some ingredients i can't pronounce but it is vegan so if you can get a healthier version of a couscous in a box that is great!

Ingredients:
1/2 cup of Targets Archer Farms roasted garlic & olive oil whole wheat couscous
3/4 cup water
1/4 tofu block (drained and pressed)
1 teaspoon of soy sauce
(you can add any veggies you like)

Directions:
1. Heat up a pan to low-medium
2. Place cubed tofu on pan and cook until all sides are brown
3. Add soy sauce to tofu and let it cook for a little bit more then set aside
4. Bring water to a boil in another pan
5. Stir in couscous in water and turn heat off and cover. Let it sit for 5 minutes
6. After stir couscous and serve on a plate and top it off with tofu.

Super simple delicious dish and it's quick to make.

Tofu Scramble

My breakfast today, i tried making tofu scramble for the first time and all i added was onion, pepper, garlic powder and a little bit of soy sauce because it was a little plain. It was alright, i think i have to experiment with different spices to get it tasting good.

Okay so yesterday i decided that I'm going vegan, i was vegetarian for a week and it wasn't hard at all because I'm use to it but now I'm trying to focus on getting all my nutrients in my diet also getting as much greens in as possible and these green smoothies really help.

(The green smoothie has blueberries, banana, rainbow chard and a little bit of water.)

The Vegan Zombie's delicious food

Yesterday morning started off with me being super hungry but i didn't want my same plain ol oatmeal, so i turned to the Vegan Zombie on Youtube and made a Tofu breakfast burrito, i took a while cause i had to drain out the water but it was worth it, it came out pretty good.



Even though I'm not 100 percent vegan or vegetarian i wanted to make these vegan lasagna rolls from the Vegan Zombie on YouTube. I would explain how i did it but why? when the vegan zombie does it so well so here is the video. Well this lasagna came out really good, the Daiya cheese made it perfect!

Tofu?

Yesterday was my first time experimenting with tofu and i wasn't as disgusted as i though i was going to be, well i cooked the tofu first with some oil added some garlic and onion and just waited till it was golden brown then i added the sesame seeds and soy sauce and done! I watched a lot of "How to tofu" videos and most were pretty similar, they cooked it till it was brown or crispy and added soy sauce so i tried it because it was so simple and it actually came out pretty good.
Recently i got an app called Whole Foods Market recipes and i love it! You can pick a spicific diet for example: vegetarian, vegan, gluten free and so on. Also you can put some recipes you have on hand and it will recommend a dish for you, it's amazing! So i've planned out my meals for one week using the Whole Food app and Yegan YumYum app , mostly vegetarian meals, and i am going grocery shopping this weekend and can't wait to start cooking!
