Vegan Peppermint Patties

So a while back I was lucky enough to get some free essential oil samples from the lovely Rachel Rinaldo, aka HealthTruth on Instagram. The Peppermint oil is from the brand doTERRA and they sell individual oils that run from around $13 and some can go as high as $100. You can check out their products here! I was super excited because the pack also came with lavender and I love the smell of lavender! It also came with the peppermint oil, so i took advantage of it and made some vegan peppermint patties!


I searched online for a super simple vegan peppermint patty recipe and came across a website called Fork and Beans they have great recipes that are dairy, gluten, and egg free, so check them out here! The original recipe calls for coconut shavings but it did not have that, so I just used four easy ingredients. Also if you want to see the original recipe you can click here. Ingredients:
  • 2 tsp agave or maple syrup (use to taste–if you need more, add by 1/2 tsp until desired preference)
  • 2 tsp coconut oil, melted
  • 1/2-1 tsp peppermint extract (depending on preference) 
  • As much chocolate as your heart desires, or about 1 bar of dark chocolate melted
First, you blend the coconut oil and maple syrup together. Add in Peppermint oil.
Second, shape the mixture into 1'' flat circles and freeze for about 20minutes.
Third, have chocolate melted and ready in a separate bowl.
Fourth, take out frozen patties, dip into chocolate and freeze for another 10 minutes.
Fifth, take out and eat all!! or share them with family and friends, your call.
