The way i cook quinoa is simply what it says on the package it comes in, I usually only measure half a cup of quinoa, 1 cup of water, a pinch of salt and let it cook for about 20 minutes.
Ingredients
1/2 cup cooked black beans
1/2 cup cooked quinoa
1/2 cup frozen corn
You can also also some veggies like green beans and broccoli.
Directions
1.Boiled the corn in a pan with water for about 3-5 minutes
2.Microwave black beans and quinoa for about 1-2 minutes (depends on your microwave)
3.After everything is done mix together and serve!
This is a super simple dish if you already have the leftovers and the frozen corn adds some sweetness to it which i like.
